Crockpot Organic Roasted Whole Chicken


Roasting an organic chicken in the oven can seem like a daunting task. The risks and anxieties are many: overcooked, undercooked, having to be home the entire time just in case something were to happen with the oven and to baste it so it doesn't dry out, making the entire house hot-as-balls all day long by using the oven throughout the day, etc.


Well, I've got some exciting news that may or may not be "new" to you: you can roast a chicken in the crockpot.


Say what?


Say, yes! It's super simple and easy, and if you play Bad and Boujee by Migos feat. Lil Uzi Vert while prepping it, it makes it that much tastier (cookin' up dope (chicken) in the crockpot).


CROCKPOT ORGANIC ROASTED WHOLE CHICKEN Cook Time: 4 or 6 hrs | Yields: 6 - 8

Ingredients:

  • Organic Whole Chicken

  • 1 Lemon

  • 4 Sprigs Rosemary

  • 2 Tbls Ghee or Coconut Oil, melted

  • 1 Clove Garlic

  • Salt & Pepper

Directions:

  1. Line bottom of crockpot with half of sliced lemon and 2 rosemary sprigs.

  2. Place Organic Whole Chicken into crockpot.

  3. Mix melted ghee or coconut oil with minced clove of garlic and salt and pepper. Using a brush, coat the chicken with butter or oil mix.

  4. Line the top of the chicken with the rest of the sliced lemon and remaining 2 rosemary sprigs.

  5. Cover and cook on high for 4 hrs or low for 6 hrs, depending on your timing. Either timing will leave your chicken cooked thoroughly without drying it out.

  6. When done, remove, cut up, and serve!

When cooking a chicken in the crockpot be careful when removing it, it will be very brittle and fall apart easily. Option to throw bones back in with chicken feet to make a homemade bone broth (more on that another time!).
